Ingredients:
4 boneless, skinless chicken breasts
1 1/2 cups all-purpose flour
1 tablespoon paprika
1 tablespoon garlic powder
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon cayenne pepper
1 1/2 cups buttermilk
2 large eggs
Vegetable oil, for frying
Instructions:
Preheat the oven to 200 degrees Fahrenheit. Place a wire rack on a baking sheet and put it in the oven.
In a large bowl, mix together the flour, paprika, garlic powder, salt, black pepper, and cayenne pepper.
In another bowl, whisk together the buttermilk and eggs.
Dip each chicken breast into the flour mixture, shaking off any excess. Then dip it into the buttermilk mixture, letting any excess drip off. Finally, dip it back into the flour mixture, making sure it is completely coated.
Heat about 1 inch of vegetable oil in a large skillet over medium-high heat until it reaches 350 degrees Fahrenheit.
Add the chicken breasts to the hot oil and fry for about 6-8 minutes per side, until golden brown and cooked through. Use tongs to turn the chicken over and be careful not to overcrowd the pan. Fry the chicken in batches if necessary.
