Rasta Pasta is a delicious and easy-to-make dish that combines the flavors of Jamaica with Italian pasta. Here's a recipe you can try:
Ingredients:
1 pound penne pasta
2 tablespoons olive oil
1 onion, diced
3 garlic cloves, minced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 tablespoon Jamaican jerk seasoning
1/2 teaspoon dried thyme
1/2 teaspoon smoked paprika
1 can (14 oz) coconut milk
1/4 cup grated parmesan cheese
Salt and black pepper to taste
Chopped fresh parsley for garnish
Instructions:
- Cook the pasta in a large pot of salted boiling water according to the package instructions. Drain and set aside.
- Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and sauté for 2-3 minutes until the onion is translucent.
- Add the diced red and yellow bell peppers to the skillet and sauté for 3-4 minutes until the peppers are slightly softened.
- Add the Jamaican jerk seasoning, dried thyme, and smoked paprika to the skillet and stir to combine.
- Pour in the coconut milk and stir to combine. Bring the mixture to a simmer and let it cook for 5-7 minutes until the sauce has thickened slightly.
